NELL study participants

Many people struggle to make healthy food choices and it's commonly known that nutrition information can be difficult to understand. The University of Kansas Nutrition Education and Literacy Laboratory (NELL) conducts research focusing on the challenges of nutrition literacy, or the capacity to understand and act upon nutrition information.

The lab partners with educators and researchers in other disciplines at the University of Kansas to deliver interprofessional education and research in this emerging teaching methodology as part of KU's dietetic internship curriculum.

Gibbs' research interest focuses upon nutrition education, with particular interest in nutrition literacy, or the capacity with which individuals can use nutrition information to make healthy dietary choices.
